Sujihiki 筋引包丁

The Sujihiki is Japan's premier slicing knife — long, slender, and devastatingly precise. Its name, 筋引 (Sujihiki), translates as "flesh slicer" or "sinew puller", a direct reference to its primary purpose: breaking down and portioning proteins and removing sinew with long, effortless drawing strokes. Where a western carving knife relies on repeated sawing motions, an expertly made and sharpened Sujihiki glides through meat and fish in a single, clean pass — preserving the texture and integrity of every slice.

The Sujihiki's narrow blade minimises surface contact and drag, while its acute edge geometry produces paper-thin, uniform slices with minimal effort. It is the double-bevel counterpart to the single-bevel Yanagiba, making it more accessible for western-trained cooks while delivering the same exceptional results. Equally at home breaking down a whole salmon, carving a roast, or portioning wagyu, the Sujihiki is an indispensable tool for any serious kitchen.
