The Sakimaru Takohiki is one of the most visually dramatic knives in the Japanese culinary tradition — a long, single-bevel sashimi knife with a distinctive curved, spear-like tip that sets it apart from all other blade styles. A variation of the classic Takohiki, the Sakimaru (先丸, meaning "rounded tip") replaces the squared-off end with an elegant, sweeping point that is as beautiful as it is functional. Traditionally used in the professional kitchens of Tokyo and eastern Japan, it is the eastern counterpart to the Yanagiba of Osaka and western Japan.
Designed for slicing raw fish with a single, long drawing stroke, the Sakimaru Takohiki produces paper-thin, clean cuts that preserve the texture and integrity of delicate sashimi. The single-bevel grind allows the blade to glide through fish with minimal resistance, while the flat spine prevents the flesh from sticking.
