This knife was made by Doi Itsuo, (a third-generation blacksmith who is now in his early 70's), by forge welding Hitachi Blue 2 to layers of pattern welded Damascus mild steel.
The heat treatment is done using a pine charcoal fire for even, controllable heat, and water for the quench.
Doi-sans heat treatment is known for high hardness and edges with a bit of bite.
This knife was then ground in Sakai Takayuki's Sanpou workshop by Mr Yamatsuka, a certified traditional master craftsmen.
You can expect highly consistent grinds without issues that are ready for Honbazuke straight out of the box.
This knife is as much a piece of artwork as it is a functioning kitchen tool for professionals.
Each detail is a true testament to the amazing artisans behind such an exquisite blade.

Aogami #2 is not stainless and will develop a patina over time with use. Regular maintenance by drying and oiling the blade helps prevent rust and corrosion.
This is what we would consider a high maintenance knife. It must be kept oiled and dry when not in use. The blade will develop a natural patina over time, but if not cared for properly, it will rust. Please take care.
