Set of two Knives, including matching Saya and Paulownia wood box (Kiribako).

Both knives are clad in stainless steel, with a core of Yasuki Aogami Super.

The Petty is made using the Warikomi method. A technique first utilised in the making of traditional Japanese swords. It is handmade from start to finish in Sakai, Osaka Prefecture. It is then ground and sharpened by Ajioka Tsukasa. Ajioka-san is a third generation certified master Craftsman and owner of Sakai Takumi Ajimasa.

The Bunka is clad in 405 stainless steel with a Yasuki Aogami Super core, with a Kurouchi Tsuchime (black hammered) finish. It is machine forged in Tosa, Kochi Prefecture, and finished by hand. It is an excellent workhorse and you will see this exact knife sold under many different brands around Japan, including Hitohira. 

These knives are made for professional use, but would also make a wonderful gift for home cooks and knife enthusiasts alike. 

Please note: Aogami Super (Blue Super) is a Carbon steel. It will rust if not cared for properly. We include instructions on proper care and maintenance with every knife we sell, but please be sure to kindly pass this on to the recipient if it is purchased as a gift.

Kurouchi (黒打ち) is a traditional Japanese finish applied to some knives, particularly to those made from carbon steel, though we are seeing it more and more on stainless steel too. In carbon steel, it provides protection from moisture and oxidation. In the case of stainless steel, it is mainly for aesthetics. This finish will wear away over time, giving every knife its own unique look and character.

3. This is a handmade product. Each knife is unique and some may carry slight marks or blemishes. These are not defects. If a defect is detected at any stage during the making process, the knife would be discarded and would not be allowed to leave the workshop to be sold.

4. Definition of Blade Length: the Length from top edge of the blade (tip) to Root of the steel [NOT top edge of the blade (tip) to the end (Ago)]. All measurements are taken from the spine.

5. The core steel (aka cutting edge) of these knives are made from Yasuki Aogami Super. Aogami Super (Blue Super) is a Carbon Steel. Please be sure to keep the blade DRY after use and oil it periodically or it may develop rust.
