TOSHU have been making high end kitchen knives since 1946.
There are more than 60 steps involved from start to finish in the creation of a TOSHU knife, with every step being given the utmost care.
All of TOSHU's products are handcrafted. Each knife is made individually by hand.
TOSHU still utilise traditional forging methods today and their unique 'hammer flame forging' technique was originally used in the production of Japanese swords. It is made by heating the steel to around 1,000 degrees and hammering.
Edo Togi is a grinding method which results in a 3:7 centre ratio, rather than the standard 5:5 centre. With one side sharpened almost vertically and the other formed into a special 'clam shape'. This method ensures a cleaner cut by not damaging the fibres of the food, keeping it fresher and improving the taste.
This technique is passed down to very few craftsmen due to the high level of skill involved to master it.
Every knife made by TOSHU is sharpened personally by Mr Tozaki Takanori, the second Generation and Face of TOSHU Knives.
Please note that Tozaki-sans hand sharpening is clearly visible on each blade. We have tried to show this as much as possible in the photos.
