Sharpened by Koujins in house sharpeners, these come with an excellent edge right out of the box. For a knife of this price range, they punch well above their weight, and overall are a good choice for both beginners and seasoned professionals.

Koujin Hamono is part of one of the longest running knife shops along Kappabashi Dori, in Asakusa, Tokyo.
