Ajioka-san is a 3rd generation knife grinder and owner of Sakai Takumi Ajimasa.
Handmade in Sakai Osaka.

Whilst this is a brand new knife that has never been used, the Saya pictured in the photos is ex-display, so it shows quite a few marks when looking at it closely. Due to this, we will be including this Saya FREE of charge. There are also some marks on the ferrule (shown in the photos). This is not uncommon for true handmade knives, but please be sure that you are fine with this prior to making your purchase. Thank you kindly for your understanding.

Shirogami (白鋼) is not stainless and will develop a patina over time with use. Regular maintenance by drying and oiling the blade helps prevent rust and corrosion.
It must be kept oiled and dry when not in use. The blade will develop a natural patina over time, but if not cared for properly, it will rust. Please take care.

4. Definition of Blade Length: the Length from top edge of the blade (tip) to Root of the steel [NOT top edge of the blade (tip) to the end (Ago)]. All measurements are taken from the spine.
5. This knife is made of Carbon Steel, not Stainless Steel. Please be sure to keep the blade DRY after use and oil it periodically or it may develop rust.
