The 'wide/broad' Kiritsuke is forged with added blade height. It allows for more clearance between your fingers and the cutting board, making for a far more comfortable grip when slicing.

Being VG-10, it will take and hold a razor sharp edge and stand up to heavy use in even the busiest of kitchens.

Please Note: This particular knife shows clear signs of hand sharpening. This means that the edge is incredibly sharp right out of the box, but please be sure you are fine with these marks before making your purchase. We have tried to show these marks clearly in our photos. Thank you for your understanding.

Fusachika Knives are made in the same workshop as Toshu Knives, with a focus on making  traditional Japanese kitchen knives specifically intended for professional use. Each knife bearing the Fusachika name is made entirely by hand.
