Petty ペティナイフ
The Petty is the Japanese answer to the western utility knife — and like everything in the Japanese knife-making tradition, it does the job with considerably more refinement. Sitting between a paring knife and a Gyuto in both size and purpose, the Petty is an indispensable all-rounder for tasks that require more reach than a paring knife but more precision than a full-sized chef's knife. ペティ (Petti) is derived from the French "petit", meaning small — a fitting name for a knife that punches well above its weight.
The Petty excels at trimming, slicing small proteins, breaking down herbs, and any task requiring a nimble, responsive blade. Its narrow profile and acute tip make it exceptionally precise, and in the hands of a skilled cook it becomes one of the most-reached-for knives on the bench. Available in a range of lengths from around 120mm to 150mm, construction methods and handle styles vary widely across makers.
